What it is

Korean red ginseng is graded almost entirely on how long the root grew before harvest, and six years is the benchmark — the point at which the root reaches full size and the highest concentration of ginsenosides, the compounds the plant is valued for. Growing a crop that long ties up the land and carries real risk, which is why most ginseng on the market is harvested at four. Cheong Kwan Jang has been working to the six-year standard since 1899 and remains the reference point for the category in Korea. How to use

Take about 1g — roughly a third of a teaspoon — once or twice daily. Stir into warm water, tea or honey, or take it directly. The taste is strongly bitter and earthy; honey is the traditional answer to that. Do not exceed the recommended daily amount.
